HOW TO MAKE:
Wash and drain the rice until the water is no longer cloudy. Drain the rice using a colander and set aside 1 hour before cooking.
Cut boiled bamboo shoots and chicken into bite-sized pieces (about 1 cm). Into a large pot, add dashi stock, sugar, mirin, bamboo shoots and chicken pieces. Bring to boil and simmer on medium heat for 10 minutes.
Add soy sauce and salt and cover with drop-lid. Once the cooking liquid has been reduced by half, stop the heat, remove the bamboo shoots and chicken from the simmering liquid, and set both aside to cool.
Remove excess oil from deep-fried tofu by rinsing it with hot water. Cut into strips. Remove stingy fiber of snow peas and blanch in salted boiling water.
Into a rice cooker, add drained rice, simmered liquid from step 3 and water. Add A according to taste, deep-fried tofu from step 4 and cook according to your rice cooker's instructions. Once the rice has finished cooking, add in the bamboo shoots and chicken immediately and cover to let it steam with the rice for another 15 minutes.
NOTES
You can cook everything in the rice cooker at once. However, we recommend preparing the ingredients separately so that it is more flavourful.

1 piece aburaage (deep-fried tofu)
8 pods snow peas
200cc dashi stock

MŌSŌ BAMBOO SHOOT
Moso bamboo shoots in Tsuruoka city are mainly cultivated in Yutagawa area near Mt. Kinpu, Tanisada, Tagawa, and Waseda area in Atsumi. It is low in astringency and is characterised by its soft texture. Moso bamboo shoot is high in dietary fiber. Not only does it prevents constipation, it also suppress the absorption of cholesterol and excrete it from the body. It also contains vitamins B1 and B2, essential minerals and is rich in protein and low in calories.
